This recipe is another good example of sneaking in some green veggies. Well, maybe “sneaking” is an inappropriate term on this recipe because it is still very obvious that you are eating a vegetable. However, they are very scrumptious and may entice those picky eaters to give green beans another try! Bonus points that they are baked and not deep fried!

Ingredients:

  • 1 lb fresh Green Beans (washed and trimmed)
  • 3/4 cup Italian Breadcrumbs
  • 1 Tbsp Ranch Dressing Mix
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
  • Cooking Spray
  • 2 Eggs

Directions:

  1. Preheat oven to 425 degrees
  2. Combine all dry ingredients (and mix well)
  3. Spray baking sheet with spray or use the ever magical Silicone Baking mat
  4. Beat 2 eggs in a separate bowl
  5. Dip green beans in the egg then the crumb mixture placing them on the baking sheet in a single layer
    (beware, trying to do large handfuls at once time ends up with a lot of clumps in the crumbs and not a lot on the beans. I don’t suggest it)
  6. Bake for 10 minutes, if necessary turn
  7. Continuing baking checking every 2 minutes until they are desired crispiness (or you can use the broiler for a few minutes to help the browning process)
