I don’t know that there are many better comfort foods than banana bread. The only down side I can come up with is that I try to eat relatively healthy but I also try not to waste food which tends to cause quite the inner conflict about whether or not to have “one more slice”. Typically, choosing not to waste food wins the argument and I heat up one more piece and spread a nice layer of butter over top. I have made this with both the standard banana and the Thai banana. Both are wonderful but there is a difference in flavor based on the banana you choose. Luckily, it requires no change in the ingredients or cooking process.


Banana Bread
  • 1 cup Mashed Bananas, 1-2 regular bananas or 3-4 Thai bananas
  • 1 cup Sugar
  • 1/2 cup Melted Butter
  • 1/2 cup Sour Cream
  • 2 Eggs
  • 1 1/2 cup Flour, I substitute 1/4 cup flour for 1/4 cup vanilla protein powder
  • 1 tsp Vanilla
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  1. Pre-heat oven to 350 degrees
  2. Grease and flour a loaf pan
  3. Mix butter and sugar
  4. Mix in eggs, bananas, sour cream, and vanilla
  5. Mix in flour, baking soda, and salt
  6. Pour into loaf pan
  7. Bake 60 -70 minutes (toothpick inserted in the center will come out clean)
Recipe Notes

We like to eat ours hot with melted butter on top. It should be stored in the refrigerator but can be sliced and heated for 10-15 seconds in the microwave to get that fresh oven warm effect again.
