If you like mouth watering and full of flavor (but lacking the lingering spice afterwards) then this is the Carnitas recipe for you! What we end up doing is waiting until pork is $1.00/lb-$2.00/lb then buying a decently large piece and cooking it all. We’ll have one fresh meal and then portion and freeze the remainder for later. You may be instantly thinking that sounds weird but surprisingly this pork freezes quite well. You defrost a bag and throw it on the stove for a few minutes in a medium sauce pan just to get it hot. It stays just a moist and flavorful and even the consistency is right. If you aren’t feeling carnitas you can put it on a bun and put your favorite BBQ sauce on top and you’ve got some killer pulled pork sandwiches.

Crock Pot Carnitas
Ingredients
  • 2 lbs Pork loin, shoulder, butt, etc
  • 1/3 cup Orange Juice
  • 2 Tbsp Lime Juice
  • 2 Cloves Garlic
  • 1 Onion
  • 1 tsp Salt
  • 1/2 Tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1/2 tsp Pepper
Instructions
  1. Slice onions to desired size (they will be super soft in the finished product so you can leave them large to pick out or smaller if you want the pieces mixed in)
  2. Mix Orange Juice, Lime Juice, Onions, and Garlic in the crock pot
  3. Mix all dry spices on a plate
  4. Coat the outside of the pork with the dry spices
  5. Set the pork on top of the mixture in the crock pot
  6. Cook 4-5 hours on high or 8 hours on low
  7. The pork should be tender enough to just fall apart. Shred it and put it back in the crock pot for 30 minutes
  8. If you like your pork to have that slight crisp to it you can broil it in the oven 3-4 minutes on a cookie sheet in a single layer
