These were always one of my favorites growing up and they are a family favorite at our house now. The recipe is super easy but results in a very hearty meal with minimal effort that will leave everyone cleaning their plate. Plus, if you have kids that love to help in the kitchen they will love rolling the meatballs. These can also be made smaller (with shorter cook time) if you’d like to serve them as an appetizer instead of a meal.

Porcupine Balls
Ingredients
  • 1 lb Ground Beef
  • 1 cup Minute Rice
  • 1 tsp Garlic Salt
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 can Cream of Mushroom Soup
  • Water
Instructions
  1. Pre-heat oven to 350 degrees
  2. Combine Cream of Mushroom soup and 1 can of water in 7x11 casserole dish (go larger if you don't have this size)
  3. Combine beef, rice, and seasonings in a bowl
  4. Roll the beef mixture into roughly 1.5 inch balls (should make around 18)
  5. Bake 30 minutes covered
  6. Turn balls and bake another 30 minutes uncovered
