This chicken comes out so incredibly moist it’s almost unbelievable. It doesn’t hurt that it’s a slow cooker meal and you can just dump it in the crock pot and forget about it until you are ready to eat. It’s hard to see in the picture but the wings were so tender they fell from the body of the chicken under their own weight. Make sure that you use a few spatulas or the BBQ gloves to take this out if you want it to stay in tact to look presentable on a platter. Otherwise, it just crumbles when you touch it. Using 2 lemons does give the chicken a very potent lemon taste. If you like it to be more subtle only use 1 lemon (and you can add an extra onion in the bottom to help keep the chicken elevated).


  • 1 Whole Chicken (~5 lbs)
  • 1 head Garlic
  • 2 Lemons
  • 1 Onion
  • 1 tsp Slat
  • 1 tsp Pepper
  • 1 tsp Thyme


  1. Slice lemon (You’ll want a few rounds from the center to put on top but the rest can be 1/4 or 1/8th lemon chunks.
  2. Quarter onion
  3. Remove top from the head of garlic
  4. Mix dry seasoning in a bowl
  5. Empty chicken, rinse, and pat dry
  6. Rub dry seasoning over entire chicken
  7. Stuff a few chunks of lemon inside chicken
  8. Place remaining lemon, onion, and garlic head in bottom of crock pot (this is the base for the chicken to keep it out of the juice as it cooks)
  9. Place seasoned (and stuffed) chicken on top
  10. Cover and cook 4-6 hours on high or 6-8 hours on low (or until the chicken has reached a safe temperature)
